How to Prevent Fires in Your Commercial Kitchen

Preventative Maintenance

A major factor in fire safety is taking preventative action and conducting regular maintenance. Your commercial kitchen should have an automatic fire suppression system in place. The system will disperse chemicals that suppress flames. When the system is activated, whether automatically or manually, it will also shut off the fuel or electric supply to the cooking equipment in the kitchen. Your regular maintenance and cleaning schedule should also include regular checks and maintenance of electrical equipment, including wiring and switch plates. Furthermore, make sure that the exhaust system in inspected regularly and that grease buildup is constantly kept to a minimum.

Staff Training

When the entire staff understands and is on the same page about safety and cleaning procedures in the kitchen, it’s beneficial for fire safety and preventing fire hazards in the kitchen. Staff training should include the use and location of the fire extinguisher, how to properly respond to grease fires, the removal of ashes, and how and where to properly store flammable liquids. For employees that smoke, they must ensure that cigarettes are properly disposed of and completely out. When chemicals are being used, they should be used only in well-ventilated areas.

When a fire does occur in a commercial kitchen, it’s essential that emergency response plans are in place. They should include properly and efficiently powering down gas and electrical power. Kitchen staff should also be trained with an evacuation plan that includes the nearest exits and calling emergency fire professionals.
